Combine the soy sauce, oyster sauce, white vinegar, aji amarillo paste and cornstarch in a small bowl and whisk together.Heat a large skillet or wok over high heat and add the cooking oil. Once hot, sear the steak for about 1-2 minutes per side depending on the thickness of the pieces. Once browned, remove the steak to a clean plate or bowl and return the wok to the heat. Add the onion and saute for about 1 minute until softened and starting to brown, then add in the tomato and cooked steak and stir together. Pour in the sauce and continue to cook, stirring constantly until the sauce has thickened slightly and coats the steak and vegetables. Toss in the fries and chopped cilantro and serve immediately.
