Stir to combine then toss the chicken thighs into the seasoned flour until they are completely coated. Set the chicken aside on a plate or rack and let them dry for 10-15 minutes to allow the flour to really adhere to the chicken. To the same bowl of flour add the starch, baking powder and additional Tbsp of the spice blend. Stir to combine. In another large bowl add the buttermilk, hot sauce and final 1 Tbsp of spice blend. Whisk until well combined then add the floured chicken thighs to the buttermilk mixture and toss until fully coated in the wet mixture. Remove the chicken from the buttermilk then place it back into the flour and starch bowl and press the coating on really well to get the best crust on the chicken thighs. Fry the coated chicken in preheated 350 F oil for 5-7 minutes or until golden brown and crispy and a thermometer inserted into the thickest part of the thigh registers 165 F. Place the chicken onto a rack and top each piece with a slice of cheese. Broil until the cheese is melted (about 1 minute)Assemble the sandwich by spreading the bottom buns with spicy mayonnaise, then sliced pickles, then a fried chicken thigh and finally a little more sauce and the top bun.
