PARMESAN GARLIC FRIES

Ingredients

  • 3 Russet potatoes

  • 1 Tbsp Vinegar

  • 1 Tbsp Salt

  • ½ cup Potato starch 

  • 4 cloves garlic minced

  • 2 Tbsp parmesan, freshly grated

  • ½ tsp Chipotle chili powder

  • 1 Tbsp fresh cilantro, chopped

 

Directions

Step 1

Wash and peel potatoes, then cut into 1/4" fries. Place in a large bowl of ice water and soak for 15 minutes to remove the starch. Drain well and dab dry with a kitchen towel.

Step 2

Boil a large pot of water, then add vinegar and salt. Add potatoes and allow to sit for 2 to 3 minutes. Remove from the pot and pat dry. Cover potatoes with the potato starch, tossing to fully coat.

Step 3

Preheat oil to 350°F. Carefully add potatoes, fry for 4 to 5 minutes, or until crisp. Remove with slotted spoon, place on wire rack to drain and immediately season with salt to taste. Transfer French fries to a large bowl, add garlic, parmesan cheese, chili powder and cilantro. Toss well to combine.
