OXTAIL PIZZA May 1 Written By Leena Ahmed https://www.youtube.com/shorts/TdVsllJyZ4M PrintOXTAIL PIZZAYield 4Prep time20 MinCook time3 H & 30 MTotal time3 H & 50 MIngredientsSmoked Oxtail:4 lbs Oxtails2 Tbsp browning sauce1 Tbsp oxtail seasoning1 Tbsp kosher salt1 Tbsp neutral oil1 carrot, peeled, chopped1 bell pepper, chopped1 onion, chopped3 scotch bonnets1 Tbsp garlic, minced1 Tbsp ginger, minced3 sprigs fresh thyme1 Tbsp oxtail seasoning2 Tbsp ketchup2 Tbsp soy sauceFor the Pizza:2 Tbsp Thai sweet chili sauce1 prepared pizza crust, defrosted if frozen1 cup shredded mozzarella cheesePro tip: if you can’t find oxtail seasoning you can make your own by combining 1 teaspoon each of: garlic powder, onion powder, paprika, cayenne powder, all spice, dried thyme and turmericInstructionsToss the oxtails with the browning sauce, seasoning blend and salt till fully coated. Arrange them in a single layer inside a smoker set at 250F. Smoke the oxtail for 1.5 hours till the meat is cooked through, it doesn’t have to fall apart tender because it will be getting braised after. This smoking helps give it that savory smoky flavor.While the oxtail is smoking, add the oil to a large dutch oven set over medium high heat. Add the bell pepper, carrot and onion to the pot and cook, stirring till the onion begins to soften, about 5 minutes. Add in the scotch bonnet peppers, garlic, ginger and thyme and cook for another 1-2 minutes till the garlic begins to get fragrant. Add the additional oxtail seasoning, ketchup and soy sauce and stir to combine.Add the smoked oxtails to the dutch oven with all the aromatics and add enough water to fully cover the oxtail. Bring to a simmer, then reduce heat to low and cover. Cook for 1.5 hours, till the meat on the oxtail is falling apart and tender.Remove the oxtails from the braise and take all the meat off the bones and add to a large mixing bowl. Add the sweet chili sauce to the meat and stir together the meat and sauce till all the oxtail meat is shredded and coated in sauce.Preheat your oven to 500F. Spread a thick layer of the seasoning oxtail over the pizza crust, top with shredded mozzarella cheese and bake the pizza on the bottom rack of your oven for 15-20 minutes till the crust is golden brown and the cheese is bubbling.
