Beef:
- 1 lb beef (flank or sirloin), thinly sliced
- 2 Tbsp soy sauce
- 1/4 cup corn starch
- 1 Tbsp neutral oil (olive, canola, avocado or grapeseed are all good choices)
- 1 tsp salt
- 1/2 tsp baking soda
For Frying:
- neutral oil (olive, canola, avocado or grape seed are all good choices)
Noodles:
- 8 oz noodles (stir fry noodles preferred)
- 3 green onions, cut on the bias
- 4-5 cloves garlic, minced
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- ginger (optional)
- dried chilis (optional)
Instructions
- Cook noodles according to package instructions. Drain. Set aside.
- In a medium bowl, place sliced beef, corn starch, oil and salt. Toss to fully coat the beef. Then sprinkle on the baking soda and toss again.
- Preheat oil (about 1 inch deep) in a deep pan or wok to about 375 degrees. Fry coated beef for about 4 minutes. Remove meat from pan and drain.
- Remove the pan from heat. Carefully pour out most of the oil from the pan (or wok), keeping about 2 Tbsp of the hot oil to remain in the pan to coat the bottom.
- To the remaining oil add about 1/3 of the green onions and garlic over medium heat. Whisk together the soy sauce and brown sugar then add that to the pan as well.
- Add noodles and toss in the sauce and beef. When fully coated, garnish with remaining green onion and serve!
