Toss to evenly coat and then set aside while you make the two other batters. In a large bowl whisk together the flour, starch, salt, pepper, garlic powder, paprika and cayenne pepper. Divide this dry mixture in half so you have two bowls with even amounts of dry ingredients. Keep one dry as is, and in the other whisk in ¼ cup of water, then add small amounts of water to create a thin batter the same consistency as pancake or crepe batter. Heat a large dutch oven with about 4 inches of oil to 350 F. While the oil heats make the sauce: In a skillet or sauce pan combine the jerk seasoning, soy sauce, ketchup, mango juice and honey over medium high heat and bring to a simmer. Turn heat down to low and whisk in the butter. Once the butter is melted remove the sauce from the heat and set aside. Batter your wings: Coat the wings in the wet batter first, then remove from the wet batter, let any excess batter drip off then coat in the dry batter, pressing the flour mixture onto the wings for maximum coating. Fry the wings in batches, separating the wings and flats. Fry the drums for 10-12 minutes and flats for 8-10 minutes until golden brown and crispy.
