Place the onion rounds into the pan and cook until charred and softened but not falling apart, about 4-5 minutes per side. Remove the onions and set aside. Return the skillet to the heat and increase to high. Divide the ground beef into two 4 ounce balls. Place the balls into the hot skillet and smash with a heavy spatula or weighted press. Season with the tbsp of seasoning salt or blend and let cook about 2 minutes. Flip the patties and top each one with a piece of cheese. Let cook another 2-3 minutes until the cheese is fully melted then stack the patties on top of eachother and remove from the pan. Layer one charred onion round on the bottom, top with the double patty with cheese, top with another onion round and enjoy.
