LENTIL SOUP Jan 10 Written By Leena Ahmed https://www.youtube.com/shorts/PwWhOiTmtHs PrintLENTIL SOUPPrep time10 MinCook time45 MinTotal time55 MinIngredients1 Tbsp olive oil1 large onion, medium diced1 russet potato, washed and small diced1 cup shredded carrots1 cup zucchini, small diced (optional)1 tsp cumin2 tsp paprika1 tsp salt1 cup red lentils1 quart of chicken stock or 2 bouillon cubes mixed into 4 cups of waterLemon juice to garnishInstructionsIn a heavy bottom pan set over medium high heat, add olive oil, onion, potato, carrots, cumin, paprika and salt. Cook, occasionally stirring, for 10 minutes. When onions have reached a sweat, add red lentils, your desired amount of chicken stock. Stir.Chef tip: If you don’t have stock, simply add the same amount of water, and 3-4 bouillon cubes.Raise heat to high and bring to a boil. Once boiling, drop heat to low, cover and simmer for 30 minutes. The lentils should be tender.Once the lentils are tender, blend the mixture until completely smooth.
