LAMB BURGER Feb 13 Written By Eleanor Debel PrintWith ImageWithout ImageLAMB BURGER Yield 2Prep time10 MinCook time10 MinTotal time20 Min Ingredients For the Burger: 1 lb ground lamb ¼ tsp cumin ¼ tsp coriander ⅛ tsp allspice ¼ tsp oregano ¼ tsp chili powder ½ tsp salt ½ tsp ground black pepper Whipped Feta Sauce: ¼ cup greek yogurt ¼ cup crumbled feta cheese 1 Tbsp honey 1 garlic clove, peeled 1 cup fresh parsley leaves ½ lemon, zested and juiced Kosher salt and black pepper to tasteTo Assemble:2 Brioche buns Harissa mayo Pickles red onion InstructionsIn a large mixing bowl add the ground lamb along with all the spices, cumin, coriander, allspice, oregano, chili powder, salt and black pepper. Thoroughly mix with your hands or a spatula so the seasoning is evenly dispersed into the meat. Form into four 4oz balls with the lamb and set aside. In a food processor combine the yogurt, feta cheese, honey, garlic, parsley, lemon zest and lemon juice. Pulse until the mixture is smooth and spreadable then add a little salt and pepper, pulse again and taste for seasoning. Transfer the whipped feta sauce to a bowl and set aside. Heat a large cast iron pan on high, once smoking add one of the lamb burgers, layer on a piece of parchment paper and press with a grill press, heavy spatula or smaller skillet so you have a nice even thickness patty about 4 inches in diameter. Repeat with the remaining burgers. To assemble: Spread harissa mayonnaise on the bottom brioche buns, then top with two lamb burgers, a heaping spoonful of whipped feta sauce and some pickled red onion and the top bun.
