THE BEST BUFFALO WINGS Feb 13 Written By Eleanor Debel https://www.youtube.com/shorts/Vj2lbx_EKsYPrintGAMEDAY BUFFALO WINGS Yield 2-4Prep time30 MinCook time15 MinTotal time45 Min Ingredients Wing Marinade: 2 lbs chicken wings 2 cups buttermilk 1-2 Tbsp seasoning blend of choice (or use the spice blend listed below)Dry Batter: 1 cup flour ½ cup potato starch or cornstarch 1 Tbsp baking powder 1 Tbsp seasoning blend of choice - I like to use dirty bird poultry rub Buffalo Sauce: ½ cup (1 stick) grass-fed butter 1 bottle (about 8-12 oz) favorite hot sauce ¼ cup honey 1 tsp seasoning blend Homemade Spice Blend Option: 3 tsp salt 3 tsp black pepper 3 tsp garlic powder 2 tsp onion powder 3 tsp paprika 1 tsp cayenne (combine and divide into three equal portions) InstructionsPreheat a fryer or dutch oven filled with oil to 350 F. Prepare a sheet tray lined with a wire rack. Preheat your oven to 450 FIn a bowl combine the spice blend till mixed well and set aside.In a large mixing bowl, whisk together the buttermilk and seasoning blend, add in the chicken wings and toss to fully submerge. Set aside and let marinate for at least 1 hour. Meanwhile, combine the butter, hot sauce, honey and seasoning blend in a small pot or skillet and bring to a simmer. Let cook for about 5-8 minutes so the sauce reduces slightly and thickens. Remove from the heat and set aside. In another large mixing bowl combine the flour, starch, baking powder and seasoning blend and whisk to combine. Transfer the chicken wings from the buttermilk, letting the excess marinade drip off, into the dry mixture and really press the flour onto the chicken so it sticks.Fry the wings in batches, separating the wings and flats. Depending on the size of your wings, fry the drums for 10-12 minutes and flats for 8-10 minutes until golden brown and crispy. Toss the wings in half the buffalo sauce then lay them out on the sheet tray lined with the rack. Bake in the 450 F oven for about 3-5 minutes to get extra crisp. Remove from the oven and brush with the remaining buffalo sauce. Serve immediately with your favorite wing dipping sauce.
