KEBAB SANDWICH

Ingredients

Kebab:

  • 1/2 white onion

  • 1/2 cup cilantro or parsley, finely chopped

  • 1 jalapeño, deseeded, finely chopped

  • 1 Roma tomato, deseeded, finely chopped

  • 1 lb 80/20 ground beef or lamb

  • 1/4 cup feta cheese

  • 1 tsp garlic 

  • 1 tsp onion powder

  • 2 tsp smoked paprika

  • 1/2 tsp cayenne

  • 1/2 tsp allspice

  • 1 tsp salt

    White sauce:

  • 1 cup full fat yogurt

  • 1/4 sesame paste

  • 1/2 lemon juice and zest

  • 2 Tbsp vinegar

  • Salt to taste

    To serve:

  • 3 pitas

  • white onions, finely chopped

  • fresh parsley, finely chopped

  • potato crisps

 

Directions

Step 1

Stand a grater upright and carefully grate peeled onion in an up and down motion. Next, drain excess moisture from grated onion using a cheesecloth. Set drained onion aside. In a small bowl, combine garlic powder, onion powder, paprika, cayenne, all spice and salt. Set aside.

Step 2

On a flat surface combine chopped parsley (or cilantro), chopped jalapeño, and chopped tomato, re-chopping as you go and fully incorporate the herbs and vegetables. On the same flat surface, add the beef (or lamb), right on top of the herb and vegetable mixture. Pour the kebab spice mixture right on top. Now, finely chop the meat, folding over the pile and fully incorporating everything together. The meat will become finely minced along with the vegetables.

Step 3

Form a log of the meat mixture onto a skewer, then cook in your preferred method. Pan frying, grilling and baking are all great options to cook. The internal temperature of the meat should reach 160 degrees.

Step 4

To make the white sauce, in a small bowl combine the yogurt, sesame paste, lemon juice and zest, vinegar and salt to taste. Transfer to a plastic squeeze bottle for easy dispensing.

Step 5

To assemble, combine finely chopped onions and parsley in a small bowl. Warm up pita bread in the pan that you cooked kebabs in (if you pan fried, to get some of the leftover flavor), place kebab meat in the center of pita bread. Pour on white sauce, onion and parsley mixture, white sauce and potato crisps. Serve immediately and enjoy!
