GRILLED LAMB CHOPS WITH HARISSA
Ingredients
2 racks cleaned and trimmed lamb chops (about 2 ½ pounds, individually cut)
Harissa Marinade:
1/2 cup yogurt
1/4 cup harissa (or pepper) paste
1 lemon, zest and juice
2 Tbsp olive oil
1 tsp turmeric
1 Tbsp garlic powder
1 Tbsp smoked paprika
1 Tbsp ancho chili powder
Salt to taste
Directions
Step 1
In a large bowl combine yogurt, harissa (or pepper) paste, lemon zest, lemon juice, olive oil, turmeric, garlic powder, smoked paprika, chili powder and salt. Place lamb chops into the yogurt mixture, cover and refrigerate for 2 hours
Step 2
Preheat the grill to 450 degrees. Spray the grill with cooking oil spray. Place chops on the hot grill for about 3 minutes (or until good grill marks appear). Flip the chops and grill for another 3 minutes. The chops are rare at 120 degrees, medium rare at 125 degrees, medium at 130 degrees, and well done at 145 degrees and higher. Cook to desired doneness.
