HOT HONEY BBQ CHICKEN
Ingredients
For the Chicken:
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1 tsp paprika
2 lb chicken drumsticks (or wings)
1/2 cup soy sauce
1 egg
Dry Mixture:2-3 cups potato starch
2 tsp baking powder
2 tsp garlic powder2 tsp chili powder
2 tsp onion powder
2 tsp paprika
Salt to taste
Neutral oil (canola or vegetable oil are suggested)
BBQ Sauce:1 1/4 cups ketchup
1 cup brown sugar
1/4 cup apple cider vinegar
1 Tbsp Worcestershire
1 Tbsp Dijon mustard
1 tsp liquid smoke
1/4 cup hot honey
2 Tbsp hot sauce
Directions
Step 1
In a small bowl, combine garlic powder, chili powder, onion powder, cayenne pepper, paprika, and salt. Set aside. In a large mixing bowl, whisk together the soy sauce, egg, and seasoning mixture. Add in chicken and fully coat. Marinade 5 to 6 hours for best flavor and texture.
Step 2
In a medium size saucepan, whisk together the ketchup, brown sugar, Worcestershire sauce, vinegar, Dijon mustard, liquid smoke, honey and hot sauce. Cook over medium high heat and allow sauce to come to a simmer, 5 to 10 minutes. Sauce will slightly thicken. Once the chicken has been marinated and you’re ready to fry, prepare the dry mixture in a large mixing bowl by combining potato starch, baking powder, garlic powder, chili powder, onion powder, paprika, and salt. Drop the chicken in and toss to fully coat each piece.
Step 3
Fry chicken in preheated, 300 degree oil for 8 to 12 minutes, remove chicken, and let drain. Bring the temperature of oil up to 375 degrees and fry again for another 4 to 5 minutes when they’re golden brown. Chicken’s internal temperature should be cooked to 165 degrees.
Step 4
In a large bowl, toss the fried chicken with prepared BBQ sauce. Enjoy!
