Place one portion of beef into the pan then a square piece of parchment paper about 6 inches wide on top of the beef ball, this will help press the smash patty without sticking. Press the patty down firmly with a heavy press or another pan or heavy spatula so that you have a thin flat patty.Season the patty with a sprinkle of salt and pepper, let the patty cook for 1-2 minutes until the edges are crisping and juices start to pool on top of the patty. Flip and immediately top with a piece of american cheese, let the cheese melt for just a moment then remove the patty and repeat the process with all three portions of beef.Assemble your burger: Spread some sauce on both sides of the bun, stack the three patties with cheese, then one slice of tomato, a piece of lettuce then the top bun.
