HEALTHY CHICKEN ALFREDO

Ingredients

  • 1 lb  fettuccine pasta

Sauce:

  • 1 lb chicken breast

  • 1/2 tsp thyme

  • 1/2 tsp oregano

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp chili powder

  • 1 tsp onion

  • Salt to taste

  • 2 Tbsp olive oil

  • 1/4 cup chicken stock

  • 1.5 Tbsp flour

  • 1.5 cups low fat or 2% milk

  • 1/3 cup low fat mozzarella

  • 1 – 3 ozParmesan to taste

  • 1/2 cup reserved pasta water 

 

Directions

Step 1

Cook pasta according to package instructions. Drain, set aside and reserve pasta water.

Step 2

Make the seasoning mixture by combining thyme, oregano, black pepper, garlic powder, paprika, chili powder, onion, powder and salt. Then sprinkle over both sides of the chicken.

Step 3

Preheat oil in a large saute pan over medium high heat, add chicken and cook undisturbed for 5 to 7 minutes, flip and cook for another 5 to 7 minutes, or until the internal temperature reaches 165°F. Transfer chicken to a cutting board.

Step 4

Lower heat to medium. Deglaze the pan with stock, scraping the bottom of the pan. Then, add flour and continue to stir. Add milk and whisk until thoroughly combined. When it comes to a light simmer, add mozzarella, parmesan, cooked pasta and reserve pasta water. Toss until pasta is fully coated.

Step 5

Cut the rested chicken into 1/2 inch slices, serve on top of a portion of the pasta and enjoy!
