CHILI GARLIC NOODLES

Ingredients

Noodles:

  • 6-12 cloves garlic, minced

  • 1 Tbsp crushed red pepper flakes

  • 1 Tbsp white un-toasted sesame seeds

  • 2 green onions, thinly sliced (green and white parts separated)

  • 3 Tbsp vegetable oil (or melted ghee)

  • 2 tsp soy sauce

  • 1 tsp honey

  • 1 lb dried noodle of any variety ( I like to use rice noodles

  • 1 cucumber, cut into thin matchsticks

  • 1/2 lime or lemon, juice

  • Optional protein: 

  • Chicken

  • shrimp 

  • tofu

  • Optional garnishes: 

  • crushed peanuts

 

Directions

Step 1

Cook noodles according to the package instructions. Drain and set aside.

Step 2

In a bowl combine garlic, chili flakes, sesame seeds, green onions (reserving the green parts for garnish.

Step 3

Heat the vegetable oil or ghee on high heat till nearly smoking, then immediately pour the hot oil into the bowl with the garlic and chili. Stir till it stops bubbling.

Step 4

Toss the noodles in with the chili garlic oil mixture and then season with soy sauce, honey and lime or lemon juice. Taste for seasoning and add salt if necessary. Garnish with green onion tops and serve immedietly .
