HEALTHY BUFFALO CHICKEN SANDWICH Jan 30 Written By Eleanor Debel https://www.youtube.com/shorts/QChFnD7xCD8 PrintHEALTHY BUFFALO CHICKEN SANDWICH Yield 3-4Prep time20 MinCook time20 MinTotal time40 Min Ingredients Air Fried Chicken 1 cup flour 1 tsp salt 1 tsp black pepper 1 tsp garlic powder ½ tsp onion powder ½ tsp cayenne ½ tsp paprika 1 cup egg whites 1 cup cornflakes, crushed 1 lb boneless skinless chicken thighs Cooking spray Ranch Sauce: ¼ cup low fat yogurt 2 tbsp light mayonnaise 1 tsp dried parsley 1 tsp dried dill 1 garlic clove, grated on the microplane 1 tsp white vinegar Hot Sauce: ¼ cup franks hot sauce 1 tsp honey To Assemble:4 low calorie burger buns Sliced pickles InstructionsPrepare your chicken breading assembly line. Whisk together the flour, salt, pepper, paprika, garlic powder, onion powder and cayenne in a shallow bowl and set aside. Put the egg white in another shallow bowl or tray, then the crushed cornflakes in a third shallow bowl or tray. Set up a fourth tray to put the breaded chicken onto as you work. Add the chicken thighs first to the seasoned flour and press the flour onto the chicken. Then dunk the floured chicken thighs into the egg whites, making sure it's thoroughly coated, then finally into the crushed cornflakes and make sure you press the cornflakes onto the chicken so they fully adhere. Preheat your airfryer to 375F. Spray the airfryer basket with cooking spray then place the chicken in one layer and spray again with more cooking spray. Air Fry for 20 minutes until the chicken is crispy and cooked through to 165F internal temperature. While the chicken cooks make the Ranch sauce: combine the low fat yogurt, low fat mayonnaise, dried dill, dried parsley, grated garlic and vinegar in a small bowl, whisking until smooth. Set aside until ready to assemble. In another small bowl stir together the hot sauce and honey and set aside. As soon as the chicken comes out of the air fryer, pour the hot sauce and honey mixture over both sides of the chicken to coat. To assemble: lightly toast the buns and spread ranch on the bottom bun. Place pickle slices then a chicken patty and top with more ranch sauce and the top bun. Serve immediately and enjoy.
