CHICKEN SOUVLAKI Jan 30 Written By Eleanor Debel https://www.youtube.com/shorts/bvICeeeG7B4 PrintChicken Souvlaki Yield 4Prep time30 MinCook time15 MinTotal time45 Min Ingredients Marinated Chicken 1 lb boneless skinless chicken breast ¼ cup olive oil 1 lemon, juiced 6 garlic cloves, pounded, grated or blended into a paste 1 tsp honey ½ tsp kosher salt ¼ tsp ground black pepper ½ tsp paprika ½ tsp dried oregano ½ tsp dried thyme Basting Liquid 1 tbsp honey 1 tbsp olive oil 1 tsp dried oregano To Assemble:Pita bread Tzatziki sauce Large ripe tomato, sliced about ¼ inch thick Salt and pepper to taste Cooked french fries InstructionsCut your chicken breasts into roughly 1 inch pieces and add to a large mixing bowl. Add the olive oil, lemon juice, garlic paste, honey, salt, pepper, paprika, oregano and thyme and mix until all the chicken is evenly coated. Let the chicken marinate for at least 30 minutes and up to 2 hours. Skewer the marinated chicken pieces evenly onto several skewers so they are touching, this will keep them from drying out when they cook. Heat a large grill pan, or outdoor grill on high heat until nearly smoking. Add the chicken skewers and cook for about 7-8 minutes on each side, they should be nicely charred and cooked through to an internal temperature of 165F.While the chicken cooks, whisk together the basting liquid of honey, olive oil and oregano. During the last couple minutes of cooking brush the basting liquid onto both sides of the chicken, then remove the chicken skewers to a plate or tray. To assemble the souvlaki, heat pita bread in an oven or toaster until warmed through, spread your favorite tzatziki sauce down the middle of the pita (you can find a recipe for mine on the recipe page). Place two or three slices of tomato down and season with salt and pepper, add enough chicken pieces to fill the pita and top with french fries. Roll up the pita and enjoy.
