CHICKEN AND RICE VS NICK Sep 19 Written By Eleanor Debel PrintCHICKEN AND RICE WITH NICKYield 4Prep time10 MinCook time45 MinTotal time55 MinIngredientsMarinated Chicken:2 Lbs boneless skinless chicken thighs 1/2 lemon, juiced 2 Tbsp tomato paste ¼ cup yogurt 1 Tbsp garlic paste 1 Tbsp Sazon (or a blend of garlic powder, paprika, cayenne, salt and pepper) Rice:2 cups long grain basmati rice, rinsed thoroughly with water ¼ tsp saffron threads, bloomed with 1 ice cube 2 Tbsp ghee 2 cups water or chicken stock ¼ tsp salt Cucumber tomato salad:1 cucumber, seeded and finely chopped 1 large tomato, finely chopped Salt and pepper to taste ½ lemon, juiced White sauce (see recipe on recipe page) InstructionsPreheat your oven to 400F. In a large mixing bowl, add the chicken thighs, lemon juice, tomato paste, yogurt, garlic paste and sazon (or seasoning blend whichever you prefer). Mix well with tongs or clean hands and let sit for at least 30 minutes. Line a sheet tray with a wire rack and spray lightly with cooking oil. Lay the chicken thighs out onto the rack in a single layer and bake in the preheated oven for 45 minutes, until golden brown and cooked through. Let sit while you make the rice. Bloom the saffron threads with the ice cube and let sit while you wash your rice. Wash with water until the water runs clean then set aside. Melt the ghee over medium heat in a large high-sided skillet or pot, once melted add the rinsed rice and stir, letting the rice toast and dry out slightly. Pour in the water or chicken broth and add in the bloomed saffron water. Add in the salt, stir and raise heat to medium high. Once the rice is simmering, turn heat to low and cover with a lid. Cook until rice is fluffy and all the liquid has been absorbed, about 15-20 minutes. Toss together all the ingredients for the cucumber tomato salad and let sit while the rice finishes cooking. Slice the chicken into thin strips and set aside before serving.
