CAJUN FRIES Feb 20 Written By Eleanor Debel https://www.youtube.com/shorts/IwA2aR3DeW8 PrintCAJUN FRIES Yield 2-4Prep time20 MinCook time15 MinTotal time35 Min Ingredients 3-4 large russet potatoes 2 Tbsp vinegar 1 cup flour 1 tsp garlic powder 1 tsp onion powder ½ tsp paprika 1 tsp salt ½ tsp black pepper 2-3 cups frying oil 1-2 Tbsp cajun seasoning (I like slap ya mama brand) InstructionsBring a large pot of water to a boil and add the vinegar. Peel the potatoes and cut them into ½ inch thick planks. Cut the planks into fries also about ½ inch thick Boil the fries in the pot of water for about 5 minutes just to tenderize them. Remove the fries from the boiling water and onto a sheet tray lined with a wire rack. Place the boiled fries into the freezer for about 10-15 minutes to cool rapidly. Heat your frying oil to 325 F. In a large bowl add the flour, garlic powder, onion powder, paprika, salt and pepper. Whisk to combine then whisk in ½ cup cold water. You want to have a thin smooth batter, add more water 1 Tbsp at a time until you have the desired consistency. Remove the fries from the freezer and toss them into the batter. Toss to coat all the fries in the batter then carefully scoop them into the 325 F oil with a slotted spoon so excess batter drips off the fries as they go into the oil. Fry for 6-8 minutes until the fries are light golden brown. Remove the fries to a tray then increase the oil temperature to 375 F. Add the fries back into the oil and cook for about 5-7 minutes until golden brown and crisp. Remove the fries and immediately toss with the cajun seasoning. Serve immediately and enjoy!
