Preheat a large pot over high heat. Sear beef for 1 minute on both sides till nicely browned .Add onions and carrots and continue to cook on high heat till the vegetables have softened slightly, about 3 minutes. Pour in the stock and bring to a boil. Add bay leaf and cinnamon stick, then bring heat down to low. Simmer for 2 hours.While the beef cooks, make the sandwich spread in a small bowl by combining mayonnaise, mustard, horseradish and chives till fully mixed.Make au jus by straining beef stock and drippings from the beef cooking mixture. Transfer the liquid to a sauce pan and add cornstarch slurry. Whisk over medium high heat till the au jus thickens slightly then remove from the heat and set aside.For the sandwich, shred cooked beef by hand and place in a large bowl. Pour in 1 cup of the au jus. To assemble the sandwich, cut the rolls open and place them on a baking sheet. Top each roll with beef, spoon on au jus, top with 3 slices of provolone cheese.Toast in the oven under the broiler on high for about 2 minutes until the cheese melts. Watch closely so the cheese doesn’t burn!
