Let sit for about 30 minutes while you chop all the other ingredients. Once the tabbouleh has sat and is plumped slightly, add in the finely chopped parsley, mint and olive oil. Toss everything together well to incorporate all the flavors. Serve with your favorite main dish and enjoy this refreshing and popular middle eastern side dish.
