Let sit in the fridge for at least 30 minutes and up to 24 hours. In another large bowl whisk together the flour, baking powder, potato starch and old bay.Prepare a large pot of oil for frying and heat to 360 F. While the oil heats, toss the marinated wings into the dry mixture and press and toss to really get the flour to stick to the wings.Fry at 360 F for about 10 minutes until golden brown and the internal temperature reaches 165 F.In a large saute pan melt the butter over medium heat until foaming then add the old bay and toast for about 1 minute.
