SPICY CHEESE LINGUINE May 1 Written By Leena Ahmed https://www.youtube.com/shorts/8WgIr4kZrls PrintSPICY CHEESE LINGUINEYield 4Prep time10 MinCook time20 MinTotal time30 MinIngredients1 lb linguine, cooked al dente according to package¼ cup reserved pasta waterCheese Sauce:1 bell pepper, diced1 shallot, diced2 habaneros, stem removed and cut in half2 cloves garlic, chopped2 Tbsp hot pepper paste1 tsp kosher salt½ tsp thyme½ tsp oregano½ cup heavy cream½ cup three pepper gouda, shredded (or any cheese of choice)InstructionsIn a large saute pan add about 2 Tbsp of cooking oil and set over medium heat. Add in the bell pepper and shallot and cook till they begin to soften and caramelize, about 5 minutes.Add the habaneros to the pan and cook for another 3-4 minutes, season with salt then add the garlic, hot pepper paste, oregano and thyme and stir to combine. Cook this mixture for another 2-3 minutes to combine all the flavors.Add in the heavy cream and stir to bring the sauce together. Bring just to a simmer then add this mixture to a blender and blend until smooth.Return the sauce to the saucepan and add the shredded cheese. Cook over medium low heat till the cheese is melted and the sauce is silky smooth. Taste and adjust the seasoning. Add in the cooked pasta and toss to combine. Thin the sauce out with a little pasta water if necessary.
