Set aside.Peel away rib membrane. Brush mustard all over the ribs to evenly coat. (Chef Note: This is used as a binder; it acts as a glue for the dry rub and the meat. During the cooking process, the mustard vaporizes, and no mustard flavor is tasted). Cover ribs evenly with dry rub.Place parchment paper onto a large baking sheet, place ribs on top, then cover tightly with aluminum foil. Bake for 2-2.5 hours. You want the meat to be almost pulling off the bone and shrunken slightly.Remove from the oven and brush the ribs with your favorite BBQ sauce, then return to the oven for another 10-15 minutes for the meat to absorb the sauce.Cut ribs into pieces, then smoke for extra flavor!
