Ingredients

  • 2lbs Chicken thighs

    Shawarma Spice Blend: 

  • 2 tsp garlic powder

  • 3/4 tbsp ground cumin

  • 3/4 tbsp turmeric powder

  • 3/4 tbsp ground coriander

  • 3/4 tbsp all spice powder

  • 3/4 tbsp paprika

  • 3/4 tbsp ground cardamom

  • 1/2 tsp ground cloves

  • 1/2 tsp cayenne pepper

  • 1 tsp sazon

  • 1 tsp onion powder

  • Salt to taste

  • 2 tbsp white vinegar

  • 1/2 lemon, juice
    1 onion, peeled

    Sauce: 

  • 1/2 cup of mayo

  • 2 Tbsp of mashed garlic

 

Directions

Step 1

Preheat oven to 400 degrees. Make spice blend in a small bowl by combining garlic powder, cumin, turmeric, coriander, all spice, paprika, cardamom, cloves, cayenne pepper, Sazon, onion powder and salt. Place chicken thighs in a large mixing bowl, pour in the spice blend, vinegar and lemon juice. Toss and massage chicken until fully coated.

Step 2

To build the skewer, cut onion in half, place on a baking sheet, flat side down. Insert 2 wooden skewers about 2 inches apart. Then, layer seasoned chicken thighs through the skewers. Once done layering, add the other half of the onion, flat side down, to secure the chicken. Place the baking rack on top of the baking sheet, set the skewer tower on top. To prevent the shawarma from tipping over, you can place it on its side alternatively.

Step 3

Bake for 1 to 1 ½ hours, or until chicken’s internal temperature reaches 165. Slice the shawarma after it has cooled slightly.

Step 4

Make sauce by stirring together mayonnaise and garlic in a small bowl. Serve with rice, salad or as sandwiches with sauce.
