SALMON AVOCADO SPRING ROLL

Ingredients

  • 8 oz Salmon, cubed (2 inches)

  • 1 Tbsp Cajun seasoning

  • 10 rice paper sheets

  • olive oil spray

  • 1 avocado, cut into 2 inch slices

  • furikake Seasoning to taste

  • Peanut (or satay) sauce for dipping

 

Directions

Step 1

Season salmon cubes with Cajun seasoning. Spray olive oil to a pan on high heat and cook salmon cubes for 1 to 2 minutes on each side. Set aside

Step 2

Add water to a round dish and submerge your rice paper roll in the water for 20-30 seconds until it softens. On a damp working surface lay down the rice paper roll, add a piece of avocado, 1 to 2 pieces of salmon (being sure not to make the roll too full) and a sprinkle of furikake. Roll it up and then fold the end on top of one another to envelope the ingredients tightly. Repeat with the rest of the ingredients.

Step 3

Sear your rolls to the same pan you cooked the salmon in and cook for 2 to 3 minutes on each side, or until they’re nice and crispy. Serve hot with a dipping sauce of choice and enjoy!
