Ingredients

  • 4 Russet potatoes

  • 1/4 cup salt 

  • 1 tsp baking soda

  • 1/4 cup olive oil

Spice Mixture:

  • 1 Tbsp paprika

  • 1 tsp garlic powder 

  • 1 tsp garlic onion

  • 1 Tbsp salt

  • 1 tsp cayenne pepper

  • 2 tsp chipotle chili powder

    Garnish:

  • Parmesan, grated 

  • cilantro 
    Dipping sauce:

  • 1 cup mayo

  • 1/4 cup sambal (chili garlic sauce) or sriracha

 

Directions

Step 1

Preheat the oven to 400 degrees. Place a baking sheet in the oven so that it’s hot when it’s time to bake the potatoes. Wash, peel and cut potatoes into 3/4 inch cubes.

Step 2

Place a large pot of water over high heat. Bring to a boil, then add salt and baking soda. Carefully drop cubed potatoes into the pot and boil for 10 minutes, or until fork tender. While the potatoes are boiling, prepare a seasoning mixture in a small bowl by combining the paprika, garlic powder, onion powder, salt, cayenne pepper, and chili powder. Set aside. Drain the cooked potatoes and put in a large bowl. Toss the potatoes in olive oil, then coat in the spice mixture.

Step 3

Carefully remove the hot baking sheet from the oven, place the seasoned potatoes on the baking sheet in a single layer. Bake for a total of 1 hour, tossing them every 10 to 15 minutes.

Step 4

While the potatoes are roasting, prepare dipping sauce by combining mayonnaise and chili garlic sauce (or sriracha).

Step 5

Transfer crispy roasted potatoes to a serving bowl, garnish with parmesan and cilantro. Serve with dipping sauce.
