ROASTED SALMON WITH OLIVE TOPPING Mar 18 Written By Eleanor Debel PrintWith ImageWithout ImageROASTED SALMON WITH OLIVE TOPPING Yield 4-6Prep time15 MinCook time30 MinTotal time45 Min Ingredients 2-3 Lb Whole Salmon Filet 2 Tbsp Hot Honey Dry Rub (or your favorite seasoning blend) Olive oil Olive Topping:½ bunch parsley, stems trimmed 2 Tbsp fresh rosemary leaves 1 cup olives (mixture of kalamata and green) 4 garlic cloves, peeled1 shallot, peeled and cut in half Optional: 1 Tbsp capers, drained 1 Tbsp tomato paste 1 large tomato1 large lemon 1 Tbsp soy sauce 2 Tbsp olive oil 2 Tbsp hot honey 1 tsp kosher salt InstructionsPreheat your oven to 325 F. Prepare a baking sheet with a generous drizzle of olive oil and set aside. In a food processor add the parsley, rosemary, olives, garlic, shallots and capers if you're using them. Pulse this mixture about 10 times, then scrape down the sides of the bowl and give it another couple pulses so you have a chunky mixture that resembles a coarse pesto. Transfer this mixture to a bowl and stir in the tomato paste. Dice the tomato into very small cubes and add to the olive mixture. Remove the peel from the lemon along with any white skin still attached, then cut in half, remove all the seeds and finely dice the flesh of the lemon. Add this to the olive mix along with any juice that accumulates on the board. Stir the olive mixture until everything is evenly mixed. Add in the soy sauce, olive oil, hot honey and salt to your topping and then set aside while you assemble the salmon filet. Pat the salmon filet dry with paper towels and lay it on the oiled sheet tray skin side down (if it still has skin on). Sprinkle the dry rub seasoning all over the salmon evenly, then spread all of the olive topping mixture over the salmon filet, covering it completely. Bake the salmon for 25-30 minutes depending on the thickness of your filet, it should easily flake with a fork when it's ready. Serve alongside rice or potatoes and enjoy.
