TURKISH-STYLE CHICKEN DONER Apr 30 Written By Eleanor Debel PrintTURKISH STYLE CHICKEN DONER Yield 2-4Prep time15 MinCook time15 MinInactive time12 HourTotal time12 H & 30 M Ingredients 1 lb boneless skinless chicken thighs, cut into thin strips ½ cup yogurt 1 Tbsp hot pepper paste ½ tsp salt ½ tsp garlic powder ½ tsp paprika ½ tsp dried oregano 1 Tbsp beef tallow To Assemble:1 french roll or pita Shatta sauce (turkish hot sauce) Sliced tomato Thinly sliced onion French fries InstructionsPreheat your broiler on high.In a large bowl add the cut chicken thighs, yogurt, hot pepper paste, salt, garlic powder, paprika and dried oregano. Toss to evenly coat all the chicken, then cover and let marinate overnight in the fridge. Heat a large, oven-safe pan over medium high heat and add in the beef tallow. Once melted and nearly smoking, add the marinated chicken in one even layer and let cook, stirring for just about 1-2 minutes to begin searing. Place the pan into the broiler and cook the chicken for about 3-4 minutes, until the chicken is nicely charred and all pieces are cooked through. Carefully remove from the broiler and set onto a heat proof surface. Make a small opening in the pan and place a bowl lined with tin foil and filled halfway with oil into the center. Drop in a lit charcoal brick into the oil then cover the pan with a tight fitting lid. Smoke the chicken for about 5 minutes, then remove the oil and charcoal and set chicken aside. To Assemble: Spread a layer of shatta sauce on the bread, then pile on the smoked chicken, top with sliced tomato and onion and a handful of french fries. Optionally, toast the bread in a panini press or just eat as it and enjoy!
