HEALTHY CRISPY BEEF TACOS Feb 19 Written By Eleanor Debel https://www.youtube.com/shorts/ZFKuRhkJviQPrintHEALTHY CRISPY BEEF TACOS Yield 4-6Prep time15 MinCook time20 MinTotal time35 MinIngredients16 oz lean ground beef cooking spray 1 white onion, finely chopped 1 Tbsp chopped garlic 1 tsp cornstarch or potato starch Taco Seasoning¼ tsp ground oregano ½ tsp onion powder½ tsp garlic powder ¼ tsp cayenne pepper ½ tsp paprika ½ tsp chili powder ½ tsp sazon 12 taco sized tortillas (I used high fiber flour tortillas) 16 oz reduced-fat shredded mexican blend cheese Cooking spray Paprika to sprinkle on the tortillas Low Calorie Dipping Sauce:½ cup low fat greek yogurt 1 Tbsp red taco sauce or hot sauce 1 Tbsp water 1 tsp taco seasoning InstructionsPreheat your oven to 425 F. Heat a large skillet over medium high heat and spray lightly with cooking oil. Once hot, add the ground beef and break it up with a wooden spoon, stirring and smashing until you have it all in one even layer. Cook for 2-3 minutes undisturbed then stir it around and let it start getting brown. Add in the onion and garlic and continue to cook, stirring occasionally until the onions begin to caramelize and the meat is nicely browned, about 6-7 minutes. Add in all the taco seasoning and starch and stir to combine. Cook for about a minute or so then add a little bit of water (2-3 tablespoons) and bring to a simmer, stirring, then remove from the heat. Spray down a sheet tray with cooking oil and lay your tortillas down on the tray. Spoon the meat onto the tortillas on one side then top with some shredded cheese. Fold the tortillas over and lightly spray the top with oil. Sprinkle the tacos lightly with paprika and bake in your preheated oven for 10 minutes, or until they are nice and crispy. Stir together all the ingredients for the dipping sauce and serve on the side.
