THE BEST EVER CHICKEN ALFREDO Oct 18 Written By Eleanor Debel https://www.youtube.com/shorts/EU3MpMxvH7YPrintCHICKEN ALFREDOYield 4Prep time15 MinCook time15 MinTotal time30 MinIngredientsFor the Chicken:4 chicken breast cutlets (2 full size chicken breasts cut in half lengthwise) 3 Tbsp olive oil ½ tsp chipotle chili powder ½ tsp paprika 1 tsp italian herb blend ½ tsp salt ½ tsp black pepper ½ tsp garlic powder ¼ tsp onion powder 1 Lb fettuccine pasta cooked al dente according to package instructions 1 tbsp olive oil 1 small onion, finely diced 3 tbsp minced garlic 2 Tbsp butter ½ cup heavy cream ½ cup grated parmesan Dried parsley flakes or fresh chopped parsley for serving InstructionsPlace the chicken breasts on a large plate or bowl and season with the olive oil then all the spices and herbs (chipotle chili powder, paprika, italian herb blend, salt, black pepper, garlic powder, onion powder) Toss to coat both sides with the seasoning and set aside. Heat a large skillet over medium high heat and add in the 1 Tbsp olive oil. Once hot, add the chicken cutlets in a single layer (do this in batches if necessary) and let cook for 4-5 minutes per side so that they are nice and charred (not burnt) on both sides and cooked through. Remove the chicken to a plate or sheet tray, cover loosely with foil to keep warm and set aside. Return the pan to medium heat and add in the chopped onion, stir to scrape up all the seasoning left behind from the chicken and soften the onion slightly, about 1 minute. Add in the minced garlic and continue cooking until the garlic is fragrant, about 1 minute. Add in the butter, let melt and stir everything together. Add in the heavy cream and reduce the heat to medium low. Once the cream is just simmering add in the grated parmesan and cooked pasta. Continue to cook, stirring, for 2-3 minutes so that the pasta absorbs the sauce and the cream sauce thickens slightly. Serve the pasta with the chicken sliced and placed on top, add parsley flakes or fresh chopped parsley for garnish.
