Mix just until combined and seasoned, be careful not to overwork the meat. Divide the meat into 4 oz portion balls. Heat a large cast iron skillet or flat top on medium high heat and add a light spray of cooking oil. Place the beef onto the hot pan and parchment paper overtop, then smash down into a thin patty. Remove the paper, let cook 2-3 minutes, flip, then top with a slice of cheese and continue cooking for 2-3 minutes. Repeat for all the portions. To assemble the burger: place harissa mayonnaise on the bottom of the buns, top with one or two patties, sliced pickles, grilled onions and the top bun. Serve immediately and enjoy.
