HEALTHY SPAGHETTI MEAL PREP Jun 25 Written By Eleanor Debel PrintHEALTHY SPAGHETTI MEAL PREP Yield 4-6Prep time10 MinCook time15 MinTotal time25 MinIngredients1 red bell pepper, stemmed and seeded1 yellow onion, peeled and cut into quarters 1 celery stalk, cut into chunks1 carrot, peeled and cut into chunks 4 cloves of garlic 1 jalapeno, stem removed1 Tbsp tomato paste ½ tsp salt¼ tsp black pepper ¼ tsp cayenne pepper ½ tsp paprika ½ tsp dried oregano 1 Lb lean brown beef 1 cup beef stock 1 can tomato sauce 1 lb pasta of choice, cooked al dente InstructionsTo a food processor add the bell pepper chunks, onion, celery, carrot, garlic and jalapeno, pulse until everything is very finely chopped. Transfer the chopped vegetables to a large saute pan set over medium heat and cook, stirring occasionally for 3-5 minutes until the vegetables begin to soften. Add the tomato paste, salt, pepper, cayenne pepper, paprika and dried oregano and continue to cook for 3-4 more minutes. Add in the ground beef and break everything up with a wooden spoon or spatula to combine. Cook, stirring frequently, until the beef is browning and loosened into chunks, about 2-3 minutes. Pour in the beef stock and bring to a simmer, stirring occasionally. Add in the tomato sauce and continue to cook for 8-10 minutes on low heat so all the flavors melt together and the sauce thickens slightly. Toss in the cooked pasta and portion out your spaghetti meal prep.
