DJAJ MUHAMMAR Mar 3 Written By Eleanor Debel PrintDJAJ MUHAMMAR (Persian Chicken and Potatoes) Yield 4-6Prep time10 MinCook time1 HourTotal time1 H & 10 M Ingredients Chicken Marinade:2 onion, peeled and quartered 8 garlic cloves, peeled 1 lemon, peeled, seeds removed and cut into chunks 1/2 bunch cilantro, leaves and stems1/2 tsp turmeric 1/2 tsp smoked paprika 1/2 tsp salt ½ tsp black pepper ¼ tsp ground coriander 6 chicken leg quarters 1 bay leaf1 cinnamon stick A pinch of saffron threads 1 tsp chicken bouillon 1 cup green olives Spiced Oil for Chicken:3 Tbsp ghee ¼ tsp turmeric ¼ tsp smoked paprika ¼ tsp salt ¼ tsp black pepper ⅛ tsp ground corianderTo serve:2 cups french fries Lemon wedges Chopped fresh cilantro InstructionsTo a food processor add the quartered onions, garlic cloves, peeled lemon chunks, cilantro and spices. Pulse until the mixture is chopped but not pureed. Set aside. Arrange the chicken legs in a large skillet in a single layer. Add the marinade and toss the legs until they are all covered in the marinade. Add 1-2 cups of water until the legs are just submerged. Set over high heat and add the bay leaf, cinnamon stick, saffron and bouillon. When the liquid begins to boil reduce the heat to low so the liquid is just simmering, then cover with a tight fitting lid. Cook for 45 minutes to 1 hour, or until the chicken is cooked through to 165 F internal temperature.Once the chicken is cooked, remove the chicken legs to a sheet tray and bring the broth that remains in the skillet to a simmer. Add in the olives and let simmer for 3-4 minutes to bring all the flavors together. Remove from the heat and set aside. Melt the ghee in a small pot and stir in the remaining spices, brush the cooked chicken legs with the spiced ghee and broil for 2-3 minutes to get browned and crispy. Spoon all the chicken liquid sauce onto a platter, top with cooked french fries, then the chicken legs, lemon wedges and chopped parsley. Serve and enjoy!
