Add in the diced onion and cook 2-3 minutes until they begin to brown. Scoot the onion to one side of the pan and add in the sirloin steak. Cook undisturbed for 4-5 minutes to get nice browning on the meat, then cook another 2-3 minutes, stirring together with the onions until the meat and onions are well combined and everything is browned. Remove from the heat and set aside. To make the cheese sauce: combine the cottage cheese, american cheese, cheddar popcorn seasoning, sazon and vegetable broth. Blend until smooth then add to a small sauce pot and heat gently over low heat until just warmed and melted through. Return the heat to medium low heat and scoot all the meat into a log in the middle of the pan. Ladle on about ½ cup of cheese sauce over the meat. Place the brioche roll, split open, over the meat and then invert the whole thing so all the meat and sauce is on the bun. Serve with extra cheese sauce on the side and enjoy.
