Blend or pulse until you have a smooth paste-like consistency. Form the chicken into ⅓ lb patties and place onto an oiled sheet tray lined with parchment paper. Freeze for at least 30 minutes. (these can be kept in the freezer just like this or breaded and frozen for up to several weeks) Place 1 cup of flour into one large bowl and the other 1 cup of flour into another bowl. Stir together all the seasonings in a small bowl then divide between the two bowls of flour. Set one aside for the dry dredge, then add the baking powder and club soda to the second bowl. Whisk until you have a thin, pancake-batter like consistency and set the dredges aside until ready to fry. Whisk together the mayonnaise, worcestershire sauce and mustard in a small bowl and set aside. Preheat a large skillet or dutch oven with oil to 350 F. Dredge the chicken patties first in the dry flour mixture, then into the wet. Fry for 6-8 minutes until golden brown and the internal temperature of the patty is at 165 F. Season with a little sprinkle of salt right out of the fryer. To assemble: Add a generous amount of mayonnaise sauce to the bottom bun, top with shredded lettuce then a fried chicken patty, top with the bun and serve immedietly.
