TRIPLE PEPPER GOUDA SMASH BURGER Apr 21 Written By Eleanor Debel PrintTRIPLE PEPPER GOUDA SMASH BURGERYield 2Prep time15 MinCook time15 MinTotal time30 MinIngredients16 oz ground beef Salt pepper and garlic seasoning blend 4 slices triple pepper gouda cheese (you can also use pepper jack or your cheese ofSauce:2 Tbsp sweet pepper relish⅓ cup mayo ¼ tsp cayenne pepper ¼ tsp chipotle chili powder Kosher salt to taste To Assemble:2 Sesame brioche burger buns Sliced pickles Sauteed or caramelized onions InstructionsDivide the ground into 4 oz portion balls.To make the sauce: stir together the pepper relish, mayonnaise, cayenne and chipotle chili powder. Season with salt to taste and set aside in the fridge. Heat a large cast iron skillet or flat top on medium high heat and add a light spray of cooking oil. Place the beef onto the hot pan and then a piece of parchment paper overtop, smash down with a heavy burger press or spatula into a thin patty. Remove the paper, let cook 2-3 minutes, flip, then top with a slice of cheese and continue cooking for 2-3 minutes. Repeat for all the portions of beef. To assemble: Toast you burger buns lightly, spoon some pepper sauce on the bottom then add pickles, two cooked patties with cheese, optional onions, a little more sauce then the top bun.
