LAZY CHOCOLATE CAKE
Ingredients
1 cup powdered sugar
1 tsp vanilla
1 egg
1 cup (2 sticks) butter
7 Tbsp cocoa powder
10 graham cracker sheets

Step 1
In a medium mixing bowl, whisk together the powdered sugar, vanilla and egg. Set aside. Place butter in a bowl over a pot of simmering water, being careful that the bowl is not touching the water. It’s the steam from the simmering water that is melting the butter. Once melted, add cocoa powder, stirring to combine. Very slowly add sugar and egg mixture, continually whisking. Once fully incorporated, remove from heat and blend with an immersion blender to make smooth and silky. Fold in crushed graham crackers.
Step 2
Lay plastic wrap onto a flat surface. Spoon mixture onto plastic and form into log shape, cover tightly with plastic. It should be a log that’s about a 12 inches x 2 inch log. Cut two 14-inch long sheets of foil and divide the batter between them. Refrigerate for at least 2 hours. Slice into 1/2-inch slices and enjoy!
