HEALTHY BEEF RAMEN Jan 10 Written By Eleanor Debel https://www.youtube.com/shorts/F40ZJW0ohp8 PrintHEALTHY RAMEN WITH SHREDDED BEEF Yield 1-2Prep time15 MinCook time2 HourTotal time2 H & 15 M Ingredients 1.5-2lb flat iron steak or your choice of any lean cut of beef 1 Tbsp olive oil 2 onions, cut into chunks 1 tsp allspice berries ½ tsp whole cloves 1 cinnamon stick 6 cups water 1 tbsp salt 2 cups cooking liquid from the beef 1 cup chopped spinach, collard greens or bok choy 1 cup shredded carrot 1 package instant ramen 1 Tbsp soy sauce 1 tsp sriracha ½ tsp sesame oil Chopped cilantro to serve InstructionsMake the beef: Cut the beef into 2 inch cubes and season with salt. Heat olive oil in a large pot over medium high heat until shimmering, then sear the beef chunks until browned on all sides. To the pot add the onion, spices, water and salt and bring to a simmer over high heat. Once simmering, drop the heat to low and cover with a lid. Simmer the beef for 2-2.5 hours until the meat is fork tender and the liquid has reduced slightly. (alternatively you can use a pressure cooker to do this method) Remove the beef from the liquid and shred with a fork and set aside. Strain the liquid and reserve to assemble the ramen. To make the ramen: Add 2 cups of the beef cooking liquid to a pot along with the chopped greens and shredded carrots. Bring to a simmer just to wilt the greens then add the instant ramen noodles, seasoning packet, soy sauce, sriracha and sesame oil. Cook until the noodles are tender, about 2-3 minutes. Transfer to a large serving bowl and top with a pile of shredded beef and chopped cilantro.
