Ingredients

Spice Blend:

  • 2 tsp garlic powder

  • 2 tsp cayenne pepper

  • 2 tsp chili powder

  • 2 tsp paprika

  • 2 tsp onion powder
    1-2 tsp salt (or to taste)

  • Shrimp:

  • 8 ounces shrimp

  • Oil (canola, vegetable or peanut)

  • 8 ounces noodles of choice (nam yung is preferred), cooked

  • 3/4 cup rice flour (or all purpose flour)

  • 3/4 cup starch (potato or corn)

  • 8-9 ounces cold water

    Garlic Butter Sauce:

  • 4 ounces butter

  • 10 cloves garlic, minced

  • 1/4 cup soy sauce

  • 2 Tbsp eel sauce

    garnish options: green onions, chives, parsley or cilantro

 

Directions

Step 1

To make the spice mixture, in a small bowl combine the garlic powder, cayenne, pepper, chili powder, paprika, onion powder and salt. Set aside. To make the tempura batter, pour the rice flour, potato starch, and half of the spice mixture in a medium sized bowl. Drizzle in cold water and whisk until fully combined. Set aside.

Step 2

In a large deep pan or pot, preheat oil (at least 3 inches deep) to 375 degrees. Season the shrimp with the other half of the spice mixture, next dip them into the tempura batter, then immediately drop them into hot oil, and let fry for 2 to 3 minutes, until golden brown. Remove from pan to drain.

Step 3

To make the sauce, place a wok on medium high heat, add butter, garlic, soy sauce, and eel sauce. Give a stir to combine. Add cooked noodles and shrimp, then toss to combine, fully coating noodles and shrimp in the sauce. Serve noodles hot with garnish of your choice. Enjoy!
