FIRE CRACKER SALMON BITES Nov 2 Written By Eleanor Debel PrintFIRE CRACKER SALMONYield 2-4Prep time15 MinCook time10 MinTotal time25 MinIngredients1 large salmon filet (2-3 lbs) 2 Tbsp soy sauce 1 Tbsp worcestershire sauce 1 tsp sesame oil ½ tsp salt ½ tsp black pepper 1 tsp garlic powder 1 tsp paprika ½ tsp cayenne pepper Sauce:¼ cup kewpie mayonnaise 1 Tbsp sweet chili sauce ½ tsp soy sauce 1 Tbsp hot sauce InstructionsPreheat an oven to 450 F and place a heavy duty sheet tray into the oven to preheat while you season the salmon. Cut the salmon filet into three strips lengthwise, then cut those strips into bite size chunks, about 1 inch in length. Add the salmon chunks to a large bowl and season with the soy sauce, worcestershire, sesame oil, salt, pepper, garlic powder, paprika and cayenne pepper. Toss to coat the salmon chunks evenly and then let sit for 15 minutes to marinate. While the salmon marinades make the sauce: in a bowl stir together the mayonnaise, sweet chili sauce, soy sauce and hot sauce. Season with a little salt, pepper, paprika and cayenne to taste and adjust as necessary. Carefully remove the hot sheet tray from the oven and arrange the salmon chunks in an even layer on the tray. Return to the oven and cook for 6-8 minutes, just until the salmon is pink, flakey and cooked through. Arrange the salmon bites on a plate and drizzle with the firecracker sauce.
