DOUBLE BEEF BACON CHEESEBURGER Mar 18 Written By Eleanor Debel https://www.youtube.com/shorts/uEeFAmHXgm8 PrintDOUBLE BACON CHEESEBURGER Yield 2Prep time15 MinCook time10 MinTotal time25 Min Ingredients Burger Sauce: ¼ cup ketchup ¼ cup kewpie mayonnaise 2 Tbsp sweet relish 1 Tbsp worcestershire sauce 1 Tbsp stone ground mustard 1 tsp cajun seasoning 1 Tbsp finely chopped chipotle pepper in adobo 4 slices beef bacon ½ onion, thinly sliced 1 lb 85/15 ground beef Sliced pickles 2 slices colby jack cheese2 brioche buns InstructionsStir together all the ingredients for the burger sauce and taste for any seasoning adjustments. Set aside in the fridge while you prepare the rest of your burger ingredients. Cook your beef bacon until nice and crispy then set aside. Portion the ground beef into 4 oz balls and set aside also. Preheat a large cast iron pan on medium high heat. Once it's nearly smoking, place one or two beef balls onto the pan and smash down into a patty using a heavy plate or spatula. Season the patty generously with salt and pepper. Place a pile of thinly sliced onions on top of the smashed patties, let cook for about 1-2 minutes then flip the patty along with the onions so they are face down on the pan under the patty. Top one patty with cheese and let cook another 1-2 minutes until the cheese is melting. Stack the patties on top of each other then turn off the heat while you build your burger. Spread the burger sauce all over the bottom of the brioche bun, add a layer of pickles, then the double patty, two slices of bacon, more burger sauce and the top bun.
