CREAMY SHRIMP SCAMPI Jan 10 Written By Leena Ahmed https://www.youtube.com/shorts/9R2VafuiKd0 PrintCREAMY SHRIMP SCAMPIYield 4Prep time5 MinCook time15 MinTotal time20 MinIngredients1 pound Linguine1 pound shrimp, peeled and deveined, tails removed if desired1 Tbsp Cajun seasoning1 Tbsp olive oil3-4 Tbsp butter3-4 cloves garlic2 lemons, juiced and zest1 cup heavy creamCajun seasoning and salt to taste2 oz Parmesan cheese2 oz mozzarella, shredded2 oz white cheddar, shredded1/2 cup reserved pasta water, plus more to adjust sauce consistency if desired1/4 cup fresh parsley, choppedInstructionsDirections:Cook the linguini to al dente in salted boiling water according to package directions.Reserve 1/2 cup of the pasta water, drain pasta, then set aside.Season shrimp evenly with Cajun seasoning, then set aside.Heat olive oil in a large pan over medium high heat. Add the shrimp to the pan, and cook the shrimp for 2-3 minutes, stirring occasionally.Remove shrimp from pan, and set aside, then add butter to pan.Melt butter while scraping the bottom of the pan to incorporate all that flavor and scrape up all the browned bits!Once butter is melted, add garlic, lemon juice, cream, Cajun seasoning and salt to your liking.Add the parmesan cheese, mozzarella cheese, white cheddar cheese, and stir. Stir in about 1/4 cup of the pasta water, add more pasta water to achieve desired thickness.Toss the pasta in the pan with sauce.
