BUFFALO CHICKEN QUESADILLA
Ingredients
Chicken:
1 pound chicken thighs, skinless, boneless
1 tsp chili powder
1 tsp garlic powder
1 tsp paprika
1 tsp salt
1/2 tsp cayenne pepper
1 Tbsp olive oil
Sauce:
1/2 cup Buffalo sauce
2 Tbsp sour cream
1/4 cup diced pickled jalapeños
2 Tbsp butter
2 large tortillas
Blue cheese or Ranch dressing to taste
1 cup cheddar cheese
Directions
Step 1
In a small bowl, thoroughly combine chili powder, garlic powder, paprika, salt, cayenne and pepper. Coat chicken with dry seasoning mixture
Step 2
Heat oil in a large skillet over medium heat. Add chicken and sear chicken for 5 minutes. Flip and cook for another 6-7 minutes. Remove chicken from the skillet, cut into 1 inch cubes and put into a large mixing bowl.
Step 3
Add Buffalo sauce, sour cream, and pickled jalapeños to the chicken. Stir to combine.
Step 4
In a clean skillet, melt 1 Tbsp of butter. Add 1 tortilla and pour half of the chicken mixture onto half of the tortilla. Pour dressing of your choice over the chicken, then half of the cheese. Fold tortilla in half to cover the chicken and cheese. Cook the quesadilla until golden brown and crispy, about 2-3 minutes each side. Remove cooked quesadilla and repeat to make your second quesadilla.
Step 5
Transfer the quesadillas to a cutting board. Use a sharp knife (or pizza cutter) to cut into 3-4 wedges. Serve immediately
