BLUE CHEESEBURGER
Ingredients
1/2 lb 80/20 ground beef
1/4 cup blue cheese
1/2 Tbsp seasoning salt (or other preferred seasoning blend)
2 strips beef bacon
1/2 onion, sliced
1 Tbsp balsamic vinegar
Olives of your choice
Preferred burger bun
Directions
Step 1
Shape two ¼ pound patties with the ground beef. Place blue cheese on top of one patty, and cover with the second patty enveloping the cheese. Season both sides of the patty with seasoning salt or other preferred seasoning blend.
Step 2
Warm skillet on medium high heat till nearly smoking. Place patties on skillet and cook 3 minutes on each side, or until done to your preferred temperature. Medium-rare (warm, red center): total 6 minutes, or 130 to 135°F / Medium (warm, pink center): total 7 to 8 minutes, or 140 to 145°F / Medium-well (hot, slightly pink center): total 9 minutes, or 150 to 155° / Well done (brown all the way through): total 10 minutes, or 160 to 165°F.
Step 3
In a separate skillet, fry beef bacon 3-4 minutes each side. Add onion to the same skillet and saute in the beef fat for 10-15 minutes. Pour balsamic vinegar onto onions and deglaze the pan.
Step 4
Remove bacon and set aside. Place the bun in the pan with onions and allow it to warm and soak up some of the bacon fat, about 1 minute.
Step 5
Assemble the burger by placing the patty on the bun, putting more blue cheese on top, then stack beef bacon strips, and caramelized onions. Finish with onions, and top with bun. Enjoy hot!
