Pat the cubes dry with a paper towel before frying them.Heat vegetable oil in a deep pot, or wok, to 350F, or until a potato dropped into the oil sizzles and rises to the top of the oil.Deep fry potatoes in vegetable oil for 12 minutes. Remove from oil and drain on a sheet tray lined with paper towels.In a wok, heat 1 Tablespoon of vegetable oil till nearly smoking. paste, garlic, chili flakes, and your choice of cayenne pepper or Cajun seasoning.
