Set aside.Place bacon into a cold pan. Cook for 2-3 minutes per side, flipping halfway through. Remove bacon to a paper towel lined plate, and reserve about 2 Tablespoons of the fat drippings.Crack eggs into bowl, add grated cheese, and gently mix with a fork to scrambleHeat a clean skillet over low heat, add the reserved beef fat. Add the eggs and allow to cook undisturbed for about 30 seconds. Then drag a rubber spatula through the egg mixture and around the edges to allow uncooked portions to hit the skillet. Continue to gently stir the eggs with the spatula every 10-15 seconds until the eggs are 3/4 of the way cooked.Add cheese and let melt as the eggs continue to cook. Make a little room in the pan, and warm the croissant.
