BREAKFAST BURRITO Apr 12 Written By Eleanor Debel https://www.youtube.com/shorts/RuJRuGog5QQ PrintBREAKFAST BURRITO Yield 4Prep time10 MinCook time15 MinTotal time25 MinIngredients1 lb ground beef ½ onion, diced ½ bell pepper, diced 2 Tbsp seasoning blend of choice 2 Tbsp butter 6 eggs 1 cup shredded cheese blend (I used cheddar, gouda and asiago) 2 avocados 4 large flour tortillas 8 hash brown patties, air fried or cooked according to package instructions Taco sauce Chipotle sour cream InstructionsHeat a large pan over medium high heat. Add the ground beef and break it up with a wooden spoon. Let cook for 3-4 minutes, stirring occasionally. Add in the diced onion and peppers, stir to combine then season with your spice blend of choice. Continue to cook the onion, peppers and beef until lightly browned and cook through, about 5-8 more minutes. Remove from heat and set aside. Heat a non-stick pan over medium heat and add the butter. Once melted, crack in the eggs, season with salt and pepper, then scramble the eggs just until set, about 3-4 minutes. Warm your tortillas then assemble the burritos: add a layer of eggs, then ground beef, top with cheese, sliced avocado, cooked hash brown patties and a drizzle of taco sauce. Roll up the burrito and toast on both sides in a hot pan or panini press.
