SALMON TACOS WITH MANGO SALSA Apr 23 Written By Eleanor Debel PrintSALMON TACOS WITH MANGO SALSA Yield 4Prep time10 MinCook time10 MinTotal time20 MinIngredients6 oz salmon filet 1 tsp old bay ½ tsp kosher salt 1 avocado¼ cup crema ½ lime, juiced ¼ tsp salt Flour tortillasMango Salsa:1 mango, diced 1 large tomato, finely diced ¼ red onion, finely diced 1 jalapeno, finely diced2 Tbsp finely chopped cilantro 1 lime, juiced ¼ tsp salt InstructionsSeason the salmon filets with the old bay and salt. Air fry the salmon at 400 F for 10-15 minutes depending on the thickness of your filets. Remove the salmon and set aside. In a medium bowl stir together the diced mango, tomato, red onion, jalapeno, cilantro, lime juice and salt. Taste and adjust seasoning as desired. In another bowl scoop out the avocado flesh and mash up with a spoon or fork. Add the crema, salt and lime juice and stir to make the avocado cream. To assemble: warm the tortillas, spread a scoop of avocado cream, then add some flaked salmon and top with mango salsa.
